A festive centerpiece that combines the nostalgic flavors of s’mores with the elegance of a traditional holiday dessert. Perfect for impressing guests during the holidays!

  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup (120g) marshmallow fluff
  • 1/4 cup (60ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) heavy cream
  • 8 ounces (225g) semi-sweet chocolate, chopped
  • 1/2 cup (50g) graham cracker crumbs
  • Mini marshmallows (optional, for topping)
  • Chocolate shavings (optional, for decoration)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a bowl, sift together flour, cocoa powder, baking powder, and salt. In a separate large bowl, beat eggs and sugar until pale and fluffy, about 5 minutes. Add vanilla extract, then gently fold in the dry ingredients until combined.
  3. Pour the batter into the prepared baking sheet and spread evenly. Bake for 10-12 minutes, or until the cake springs back when touched.
  4. While warm, carefully roll the cake (with parchment paper) into a log shape. This prevents cracking later. Let cool completely.
  5. Whip marshmallow fluff, heavy cream, and vanilla extract until smooth and spreadable.
  6. Unroll the cooled cake and spread the marshmallow mixture evenly over the surface. Re-roll the cake tightly and place seam-side down.
  7. Heat heavy cream until steaming, then pour over chopped chocolate. Let sit for 5 minutes, then stir until smooth.
  8. Spread ganache over the rolled cake. Sprinkle graham cracker crumbs on top and add mini marshmallows or chocolate shavings if desired.
  9. Refrigerate for 30 minutes before serving to allow the ganache to set.
