Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken thighs dry with paper towels.
  2. Season both sides of chicken thighs with salt, pepper, and smoked paprika (if using).
  3. Place a wire rack inside a large rimmed baking sheet. Arrange chicken thighs skin-side up on the rack, leaving space between each piece. Drizzle olive oil over the skin and rub in lightly.
  4. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, apple cider vinegar, garlic powder, and red pepper flakes (if using).
  5. Roast chicken in the preheated oven for 25 minutes, undisturbed.
  6. Remove tray from oven and brush each thigh generously with the honey mustard glaze.
  7. Return chicken to oven and roast for another 10–15 minutes, until skin is golden and glaze is bubbling.
  8. Check for doneness: chicken is ready when a thermometer inserted into the thickest part reads 175°F (80°C) and juices run clear. If skin isn’t crisp, broil for 2–3 minutes, watching closely.
  9. Let chicken rest for 5 minutes before serving. Garnish with chopped parsley and lemon wedges if desired.
