  • 1 cup (150g) fine cornmeal
  • 1/4 cup (50g) sugar
  • 1 tablespoon (15g) baking powder
  • 1/2 teaspoon (2g) salt
  • 1 cup (240ml) milk
  • 2 large eggs
  • 1/4 cup (60g) melted unsalted butter
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15g) butter (for skillet)
  • 2 tablespoons (30g) softened butter (for honey butter topping)
  • 1 tablespoon (15ml) honey (for honey butter topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Place your cast-iron skillet in the oven to heat while you prepare the batter.
  2. In a large mixing bowl, whisk together all-purpose flour, fine cornmeal, sugar, baking powder, and salt.
  3. In a separate bowl, whisk milk, eggs, and melted unsalted butter. Stir in honey.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.
  5. Carefully remove the hot skillet from the oven. Add butter and swirl to coat the bottom and sides. Pour the batter into the skillet and spread it evenly.
  6. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. While the cornbread bakes, mix softened butter with honey in a small bowl until smooth.
  8. Remove the skillet from the oven and let the cornbread cool for 5 minutes. Brush the honey butter generously over the top, letting it melt into the warm cornbread.
