  • 2 cups (480 ml) Greek yogurt (full-fat or 2%)
  • 2 tablespoons (30 ml) honey (or maple syrup/agave for vegan)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 g) fresh or frozen berries (blueberries, sliced strawberries, raspberries, or mix)
  • 1 tablespoon (15 g) chia seeds (optional)
  • 2 tablespoons (15 g) slivered almonds or nuts (optional)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a mixing bowl, combine 2 cups (480 ml) Greek yogurt with 2 tablespoons (30 ml) honey and 1 teaspoon (5 ml) vanilla extract. Stir gently until smooth and fully blended.
  2. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper or a silicone baking mat.
  3. Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4 inch (6 mm) thickness using a spatula or spoon.
  4. Scatter 1 cup (150 g) of fresh or slightly thawed frozen berries evenly over the yogurt. Sprinkle 1 tablespoon (15 g) chia seeds and 2 tablespoons (15 g) slivered almonds or nuts if using. Add 1 teaspoon lemon zest if desired. Gently press toppings into the yogurt.
  5. Place the baking sheet in the freezer and freeze for at least 3 hours or overnight until solid.
  6. Remove the bark from the freezer, peel off the parchment paper or silicone mat, and break into irregular pieces about 2-3 inches (5-7.5 cm) each.
  7. Store pieces in an airtight container or freezer bag in the freezer for up to 2 weeks.

Notes

Use thick Greek yogurt for best results; straining regular yogurt overnight can help if Greek yogurt is unavailable. Freeze overnight for easier breaking. Press berries into yogurt to keep toppings intact. Thaw frozen berries slightly before use to avoid sogginess. Variations include using coconut yogurt for dairy-free, adding cocoa powder for chocolate flavor, or swapping nuts for seeds to avoid allergens.
