A quick and easy recipe for sweet and smoky grilled pineapple with a buttery brown sugar glaze. Perfect for summer barbecues or as a tropical dessert.

Ingredients

Scale
  • 1 fresh pineapple, peeled, cored, and sliced into rings or spears
  • 1/4 cup unsalted butter, melted
  • 1/3 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Peel and core the pineapple, then slice it into rings or spears about 1/2 inch thick.
  2. In a small saucepan, melt the butter over low heat. Stir in the brown sugar, cinnamon, vanilla extract (if using), and a pinch of salt. Cook until the sugar is dissolved and the glaze is smooth, about 2-3 minutes.
  3. Preheat your grill to medium heat (around 375°F or 190°C). Lightly oil the grates to prevent sticking.
  4. Using a basting brush, coat each piece of pineapple generously with the brown sugar glaze. Reserve some glaze for serving.
  5. Place the pineapple slices directly on the grill grates. Cook for 2-3 minutes per side, or until grill marks appear and the glaze caramelizes.
  6. Remove the grilled pineapple from the grill and drizzle with the reserved glaze. Serve warm as a side dish, dessert, or on top of vanilla ice cream.

Notes

Use ripe pineapple for the best flavor. Medium heat is ideal to prevent burning the glaze. Experiment with spices or add a splash of rum for a unique twist.
