  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup feta cheese, crumbled or cubed
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper

Instructions

  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Heat a small skillet over medium heat and toast the pine nuts for 2-3 minutes, stirring frequently, until golden brown and fragrant. Remove from heat and set aside.
  3. Add the crumbled or cubed feta cheese to the watermelon in the bowl.
  4. Roughly chop the fresh mint leaves and sprinkle them over the watermelon and feta.
  5. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper to make the dressing.
  6. Pour the dressing over the watermelon mixture and gently toss everything together using salad tongs or a big spoon.
  7. Sprinkle the toasted pine nuts over the salad as a finishing touch.
  8. Transfer to a serving platter or bowl and serve immediately.
