  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • 68 fresh basil leaves, thinly sliced or torn
  • Pinch of sea salt

Instructions

  1. Prepare the whipped feta: In a medium bowl, combine 6 ounces of crumbled feta cheese and 2 tablespoons of softened cream cheese. Using a handheld mixer or fork, whip together while slowly adding 2 tablespoons of whole milk or heavy cream until smooth and spreadable. Season with freshly ground black pepper to taste. Set aside.
  2. Toast the brioche: Heat a non-stick skillet over medium heat. Spread 1/2 tablespoon of softened butter on the top side of each brioche slice. Place the slices butter-side-down in the skillet and toast until golden brown and slightly crisp, about 2-3 minutes. Flip and toast the other side for 1-2 minutes. Remove and set on a cooling rack.
  3. Prepare the strawberry topping: In a small bowl, combine 1 cup sliced fresh strawberries, 1 tablespoon balsamic vinegar, 1 teaspoon honey (optional), a pinch of sea salt, and 6-8 torn or thinly sliced fresh basil leaves. Gently toss to coat and let sit for 5 minutes to meld flavors.
  4. Assemble the bruschetta: Spread a generous layer of the whipped feta on each toasted brioche slice. Spoon the strawberry balsamic mixture evenly over the top. Garnish with an extra basil leaf if desired.
  5. Serve immediately: Enjoy fresh while the brioche is still warm and crisp. Assemble just before serving to prevent sogginess.

Use room temperature feta and cream cheese for easier whipping. Toast brioche with butter for a golden crust. Let strawberries marinate at least 5 minutes for best flavor.
