  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice (about half a lemon)
  • 2 tbsp red onion, finely diced
  • 1/2 cup (75 g) cherry tomatoes, halved
  • 1/4 cup (40 g) Kalamata olives, pitted and sliced
  • 1/2 cup (75 g) cucumber, diced
  • 2 tbsp fresh parsley, chopped
  • 810 butter lettuce leaves
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 tbsp capers

Instructions

  1. Prepare the Vegetables (10 minutes): Rinse and dry the butter lettuce leaves gently with a kitchen towel; set aside. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion and parsley. If using capers and olives, slice them thinly.
  2. Mix the Dressing (2 minutes): In your mixing bowl, whisk together the extra virgin olive oil, fresh lemon juice, salt, and black pepper until combined.
  3. Add Tuna and Veggies (3 minutes): Drain the tuna thoroughly. Add the tuna to the bowl with the dressing, then toss in the chopped cucumber, tomatoes, red onion, olives, capers (if using), and parsley. Gently fold everything together with a spoon or fork to keep the tuna chunky.
  4. Taste and Adjust (1 minute): Taste the salad and add more salt, pepper, or lemon juice if needed.
  5. Assemble the Wraps (5 minutes): Lay out the butter lettuce leaves on a serving plate. Spoon a generous amount of the tuna salad onto each leaf without overstuffing.
  6. Serve Immediately: Enjoy the wraps right away for best crispness. If preparing ahead, keep salad and lettuce separate and combine just before serving.
