  • 2 cups plain or vanilla Greek yogurt
  • 2 tablespoons honey or maple syrup (optional)
  • 1/2 cup strawberries, sliced
  • 1/2 cup mandarin orange segments
  • 1/2 cup pineapple chunks
  • 1/2 cup kiwi slices
  • 1/2 cup blueberries
  • 1 cup multigrain cereal or granola
  • Optional: shredded coconut or chopped nuts for texture

Instructions

  1. Wash all fruit thoroughly. Slice strawberries, kiwi, and pineapple into bite-sized pieces. Peel and segment mandarin oranges and rinse blueberries.
  2. Mix Greek yogurt with honey or maple syrup in a bowl until creamy and slightly sweetened, if desired.
  3. Spoon about 2 tablespoons of yogurt into the bottom of each cup.
  4. Add a layer of strawberries (about 2 tablespoons).
  5. Add another 2 tablespoons of yogurt, then a layer of mandarin oranges.
  6. Continue layering yogurt and fruit in rainbow order: pineapple, kiwi, and finally blueberries, each about 2 tablespoons.
  7. Top each parfait with a generous 2 tablespoons of cereal or granola. Optionally sprinkle shredded coconut or chopped nuts.
  8. Chill parfait cups for 15-20 minutes if desired to help flavors meld and yogurt firm up.
  9. Serve and enjoy.

Notes

Use thick Greek yogurt for best layering. Pat dry juicy fruits to keep cereal crunchy. Add cereal just before serving to avoid sogginess. Uniform fruit cuts help create neat layers. Can substitute dairy-free yogurt and maple syrup for vegan version.
