  • 1 cup cherry tomatoes, halved (about 5 oz)
  • 45 radishes, thinly sliced
  • 3.5 oz feta cheese, crumbled (use vegan feta if needed)
  • 0.5 cup pomegranate seeds (about 2.5 oz)
  • 2 hard-boiled eggs, sliced
  • 0.5 cup roasted red peppers, sliced (about 2.5 oz)
  • Handful microgreens or arugula
  • Chili flakes or chili crunch (optional)
  • 0.25 cup pickled onions (about 1.25 oz, optional)
  • Everything bagel seasoning

Instructions

  1. Toast 6-8 slices of bread (sourdough, rye, or gluten-free) in a toaster or under the oven’s broiler until golden and crisp, about 3-4 minutes per side. Set aside to cool slightly.
  2. Scoop out the flesh from 2 large avocados into a bowl. Add lemon juice, olive oil, sea salt, and black pepper. Mash with a fork until mostly smooth, leaving some chunks for texture. Taste and adjust seasoning.
  3. Slice cherry tomatoes, radishes, hard-boiled eggs, and roasted red peppers. Crumble feta cheese. Place all toppings in small bowls. Rinse and dry microgreens or arugula. Place pomegranate seeds in a bowl.
  4. Arrange toasted bread slices on a large serving board or platter. Spoon avocado mash into a central bowl or spread directly onto the toast slices. Place bowls of toppings around the bread.
  5. Let everyone build their own toast: Start with bread, spread on avocado, then pile on toppings. Try classic combos like avocado + tomatoes + feta + microgreens, or avocado + egg + chili crunch + pickled onions.
  6. Sprinkle everything bagel seasoning or a dash of sea salt over finished toasts. Drizzle with extra olive oil if desired. Serve immediately while the bread is still a little warm.
