Fresh & Flavorful Pasta Salad Recipe with Italian Dressing

A vibrant and satisfying pasta salad packed with fresh veggies and a tangy homemade Italian dressing, perfect for any occasion.

  • 12 oz rotini or bowtie pasta, cooked al dente
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced (Persian or English cucumbers work best)
  • 1 cup bell peppers, diced (red, yellow, or orange)
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1 cup cooked chicken breast, shredded (optional)
  • 1/2 cup cubed mozzarella or feta cheese (optional)
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sugar (optional)
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. While the pasta is cooking, prepare the veggies. Dice the cucumber, bell peppers, and onions. Halve the cherry tomatoes and slice the black olives. Set them aside.
  3. If adding protein, shred the cooked chicken or cube the mozzarella/feta cheese.
  4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic powder, oregano, salt, pepper, and sugar (if using). Alternatively, combine the ingredients in a jar, seal, and shake vigorously.
  5. In a large mixing bowl, combine the cooked pasta, vegetables, and any protein you’re including. Pour the Italian dressing over the top and toss until everything is evenly coated.
  6. Sprinkle fresh parsley or basil on top for garnish. Give it one final toss and taste to adjust seasoning if needed.
  7. Serve immediately or chill for 1-2 hours for the flavors to meld together.

Notes

Reserve a little dressing to toss in just before serving to keep the salad vibrant and fresh. Chill for 1-2 hours for the best flavor.
