These fluffy Irish soda bread muffin bites are a quick and easy twist on traditional soda bread, featuring a tender crumb with golden raisins and a hint of sweetness. Perfect for St. Patrick’s Day brunch, snacks, or gifting.

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 4 tablespoons (57g) cold unsalted butter, cut into small cubes
  • 1 cup (240ml) buttermilk, room temperature (or dairy-free milk with 1 tbsp vinegar)
  • 1 large egg, room temperature
  • 1/2 cup (75g) golden raisins

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your muffin tin or line with silicone liners.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, sugar, and salt until evenly mixed.
  3. Add the cold cubed butter to the dry ingredients. Use a pastry cutter or two knives to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk and egg until smooth.
  5. Pour the wet mixture into the dry ingredients and gently fold together with a wooden spoon or spatula until just combined. The batter should be slightly lumpy; do not overmix.
  6. Fold in the golden raisins evenly.
  7. Divide the batter evenly among 12 muffin cups, filling each about three-quarters full.
  8. Optionally, sprinkle a pinch of coarse sea salt or sugar on top of each muffin bite.
  9. Bake for 18–22 minutes, checking at 18 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  10. Let the muffin bites cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
