  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup warm milk (about 110°F / 43°C; dairy-free milk optional)
  • ¼ cup granulated sugar
  • ⅓ cup unsalted butter, melted and cooled (can swap for coconut oil)
  • 1 tsp salt
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract (optional)
  • ½ cup unsalted butter, softened (for filling)
  • ½ cup granulated sugar (for filling)
  • 2 tbsp ground cinnamon (for filling)
  • 1 large egg, beaten with 1 tbsp water (for egg wash)

Instructions

  1. Activate the yeast: In a small bowl, stir the yeast into the warm milk with 1 tsp of sugar. Let sit for 5-10 minutes until foamy and bubbly.
  2. Mix the dough: In a large bowl, combine flour, sugar, and salt. Add melted butter, eggs, vanilla (if using), and the yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. If using a stand mixer, knead on medium speed for 5-6 minutes.
  4. First rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. Prepare filling: Mix softened butter, sugar, and cinnamon in a small bowl until well combined.
  6. Shape the rolls: Punch down dough and roll out into a ¼ inch thick rectangle. Cut into 12 squares.
  7. Fill and roll: Place about 1 tsp of cinnamon filling in the center of each square. Fold corners over to seal and pinch edges firmly.
  8. Second rise: Place rolls seam-side down on a parchment-lined baking sheet, cover loosely, and let rise for 30-45 minutes until puffy.
  9. Apply egg wash: Brush tops with beaten egg wash for a shiny crust.
  10. Bake: Bake at 375°F (190°C) for 15-18 minutes until golden brown.
  11. Cool and serve: Let rolls cool slightly on a wire rack before serving warm.

Notes

Do not rush the rising times to ensure fluffy rolls. Use softened but not melted butter for filling to avoid greasy centers. Roll dough evenly for consistent baking. Egg wash gives a beautiful golden finish; milk or cream can be used as substitutes but with less shine. Dough can be prepared ahead and refrigerated overnight for convenience.
