Fluffy Herb Butter Dinner Rolls

  • 3 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup warm milk (110°F/43°C)
  • 3 tablespoons unsalted butter, softened
  • 1 egg
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh rosemary

Instructions

  1. Activate the yeast: In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. Mix the dough: In a large mixing bowl or stand mixer, combine the flour, salt, and activated yeast mixture. Add the egg, 3 tablespoons of softened butter, and olive oil. Mix until the dough comes together.
  3. Knead the dough: Knead on medium speed for 6-8 minutes using a stand mixer or by hand for about 10 minutes until smooth and elastic.
  4. Let it rise: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1-2 hours or until it doubles in size.
  5. Shape the rolls: Punch down the dough and divide it into 12 equal portions. Roll each piece into a ball and arrange them on a greased baking sheet.
  6. Second rise: Cover the rolls with a towel and let them rise for 30-45 minutes until puffy.
  7. Preheat oven: Preheat your oven to 375°F (190°C).
  8. Make herb butter: Mix 3 tablespoons of melted butter with chopped fresh parsley and rosemary in a small bowl.
  9. Bake: Brush the rolls with herb butter, bake for 18-22 minutes or until golden brown. Brush with more herb butter immediately after removing from the oven.

Notes

If your dough feels sticky during kneading, dust your hands with a little flour. Tent the rolls with aluminum foil if they are browning too quickly.
