  • 3 tablespoons (42g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract (optional)
  • Red gel food coloring
  • Blue gel food coloring
  • Yellow gel food coloring

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt until evenly combined.
  2. In a separate bowl, beat the egg, then stir in milk, melted butter, and vanilla extract until smooth.
  3. Gradually add wet ingredients to dry ingredients, stirring gently until just combined; small lumps are okay.
  4. Divide batter evenly into three small bowls. Add 4-5 drops of red gel food coloring to one, blue to another, and yellow to the last. Stir gently until colors are vibrant and uniform.
  5. Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan with non-stick spray or butter.
  6. Using a small spoon or ladle, drop about 1 tablespoon of each colored batter into each muffin cup in random order. Swirl colors gently with a toothpick or skewer to create a marbled effect without overmixing.
  7. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean and edges are set but soft.
