Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240ml) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 4 tablespoons (57g) unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract
  • ½ cup (about 75g) fresh strawberries, finely chopped
  • 1 cup (175g) semisweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smooth shine)
  • Optional garnish: freeze-dried strawberry powder or crushed freeze-dried strawberries, sprinkles or chopped nuts

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your donut pan or spray with non-stick spray.
  2. In a large bowl, whisk together all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined; do not overmix.
  5. Fold in the finely chopped fresh strawberries gently.
  6. Spoon or pipe the batter into the donut cavities, filling each about 3/4 full.
  7. Bake for 12 to 15 minutes, until the tops spring back when lightly touched and a toothpick inserted comes out clean.
  8. Let the donuts cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely before dipping.
  9. Melt semisweet chocolate chips with coconut oil in a double boiler or microwave in 30-second bursts, stirring until smooth and glossy.
  10. Dip the tops of cooled donuts into the melted chocolate, then place back on the rack.
  11. Sprinkle with crushed freeze-dried strawberries or nuts if desired and let the chocolate set completely at room temperature or in the fridge.

Notes

Do not overmix the batter to keep donuts fluffy. Use room temperature eggs and buttermilk for best results. Cool donuts completely before dipping in chocolate to prevent melting. Adding coconut oil to chocolate dip gives a smooth, shiny finish. If batter is too thick, add a splash of buttermilk.
