Soft, pillowy cinnamon rolls with a playful Easter bunny theme, perfect for brunch or festive celebrations.

Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 2 ¼ tsp instant yeast
  • ½ cup warm milk (110°F)
  • ⅓ cup granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup unsalted butter, melted
  • ½ tsp salt
  • ⅔ cup light brown sugar
  • 2 tbsp ground cinnamon
  • ¼ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 3 tbsp milk
  • ½ tsp vanilla extract
  • Mini marshmallows
  • Shredded coconut (optional)
  • Pink icing or fondant

Instructions

  1. In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy. Add eggs, melted butter, and salt, then gradually mix in the flour until a sticky dough forms.
  2. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5 minutes.
  3. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm spot for about an hour or until doubled in size.
  4. Mix brown sugar and cinnamon in a small bowl. Spread softened butter evenly over the rolled-out dough, then sprinkle the cinnamon-sugar mixture on top.
  5. Roll the dough tightly into a log and cut it into 12 even pieces. Place the rolls in a greased baking dish.
  6. Cover the dish and let the rolls rise for another 30 minutes.
  7. Preheat the oven to 350°F (175°C). Bake the rolls for 20–25 minutes until golden brown.
  8. Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm rolls.
  9. Use marshmallows for tails, pink icing for bunny feet, and coconut for fluff. Get creative with the details!

Notes

Let the decorations dry before serving to ensure they stay intact. Cover rolls loosely with foil during the last 10 minutes of baking if browning too fast.
