  • 4 tablespoons unsalted butter, softened

  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • Optional: pinch of smoked paprika
  • Optional: grated Parmesan cheese

Instructions

  1. Peel back the husks and remove the silk from each ear of corn. Rinse under cold water and pat dry.
  2. Preheat the grill to medium-high heat and let it preheat for about 10 minutes.
  3. In a mixing bowl, combine softened butter, chopped cilantro, lime zest, lime juice, garlic powder, and a pinch of salt. Stir until smooth and well combined.
  4. Use a pastry brush to coat each ear of corn with olive oil.
  5. Place the corn directly on the grill grates. Turn every 2-3 minutes, allowing each side to char slightly. Grill for a total of 10-12 minutes or until tender and golden brown.
  6. While the corn is still hot, slather each ear generously with the cilantro lime butter. Let the butter melt into the corn for maximum flavor.
  7. Transfer the corn to a serving platter and sprinkle with additional cilantro and lime zest for garnish, if desired.
