  • For the glaze:
  • 1 ½ cups (180g) powdered sugar
  • 2 tablespoons (30ml) milk or cream
  • 1 teaspoon vanilla extract
  • Extra rainbow sprinkles for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour your donut cake pan to prevent sticking.
  2. In a large bowl, whisk together 2 ½ cups all-purpose flour, 1 tablespoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt.
  3. In a separate bowl, beat ½ cup softened unsalted butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in 2 large eggs one at a time, then stir in 2 teaspoons vanilla extract until smooth and glossy.
  5. Add the dry ingredients in three parts, alternating with 1 cup buttermilk, starting and ending with the dry mix. Mix gently after each addition.
  6. Using a rubber spatula, gently fold ¾ cup rainbow sprinkles into the batter, being careful not to overmix.
  7. Pour batter into the prepared pan, smoothing the top with a spatula. Tap the pan gently on the counter to release air bubbles.
