A whimsical and colorful breakfast recipe featuring vibrant layers of fluffy pancakes swirled inside clear jars, perfect for celebrations or a fun family treat.

  • 1 ½ cups (180g) all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs, room temperature
  • 1 ¼ cups (300ml) whole milk (or almond milk for dairy-free)
  • 4 tbsp unsalted butter, melted
  • 1 tsp pure vanilla extract
  • Red, orange, yellow, green, blue, and purple gel food coloring, a few drops each
  • ½ tsp ground cinnamon (optional)
  • Maple syrup or honey (for serving)
  • Fresh berries or whipped cream (for garnish)

Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt. (5 minutes)
  2. Combine wet ingredients: In another bowl, beat eggs, then add milk, melted butter, and vanilla extract. Whisk until smooth. (3 minutes)
  3. Make the batter: Pour wet ingredients into dry mix and gently fold until just combined. (2 minutes)
  4. Divide & color the batter: Split batter evenly into six bowls. Add gel food coloring to each to create red, orange, yellow, green, blue, and purple batters. Stir gently. (5 minutes)
  5. Prepare the jars: Using squeeze bottles or piping bags, layer the colored batters in clear jars in rainbow order or swirl pattern. (10 minutes)
  6. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease. Pour small rounds (~3 inches wide) of each colored batter. Cook until bubbles form (~2 minutes), flip and cook 1-2 minutes until golden. (20 minutes)
  7. Assemble the pancake twirl jars: Layer cooked pancakes back into jars in rainbow order, optionally adding maple syrup or whipped cream between layers. (10 minutes)
  8. Serve & enjoy: Garnish with fresh berries or powdered sugar and serve immediately.

Notes

If batter is too thick after coloring, add a splash of milk to loosen. Use gel food coloring to keep batter thick and colors vivid. Cook pancakes on medium heat to avoid burning or drying out. Batter can be mixed and colored up to 24 hours ahead and refrigerated. For gluten-free, use a 1:1 gluten-free baking blend. For vegan, substitute eggs with flax eggs and use plant-based milk and butter alternatives.
