Three unique variations of deviled eggs—classic creamy, smoky bacon, and tangy avocado lime—that are easy to make and perfect for any gathering.

Ingredients

Scale
  • 6 large eggs, hard-boiled and peeled
  • 3 tbsp mayonnaise
  • 1 tsp yellow mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (for garnish)
  • 2 tsp Dijon mustard
  • 2 strips cooked bacon, crumbled (plus extra for garnish)
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1 ripe avocado
  • 1 tbsp lime juice
  • 2 tbsp Greek yogurt
  • 1/4 tsp chili powder (optional, for a little kick)

Instructions

  1. Place the eggs in a pot and cover with water. Bring to a boil over medium-high heat, then let simmer for 10 minutes. Remove and transfer to an ice bath to cool for 5 minutes. Peel carefully.
  2. Slice each egg in half lengthwise. Gently scoop out the yolks and place them in a mixing bowl. Set the whites aside.
  3. Mash the yolks with mayonnaise, mustard, salt, and pepper until smooth. Taste and adjust seasoning if needed.
  4. Mix yolks with mayonnaise, Dijon mustard, crumbled bacon, smoked paprika, and garlic powder. Stir until well combined.
  5. Mash yolks with avocado, lime juice, Greek yogurt, salt, and chili powder until creamy.
  6. Use a piping bag or spoon to fill each egg white with the corresponding mixture.
  7. Sprinkle paprika on the classic eggs, add extra bacon crumbles to the smoky version, and top the avocado lime eggs with a dash of chili powder.
  8. Arrange the eggs on a platter and refrigerate for 20 minutes before serving. Enjoy!

Notes

[‘Use an ice bath after boiling the eggs to make peeling easier.’, ‘For ultra-smooth fillings, use a food processor instead of mashing by hand.’, ‘Don’t overfill the piping bag—less is more for neat presentation.’, ‘If your yolk mixture seems dry, add a splash of milk or extra mayo for creaminess.’, ‘Chill the eggs before serving for the best texture and flavor.’]
