  • 3 tablespoons white or yellow miso paste
  • 2 tablespoons pure maple syrup
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon sesame oil
  • ½ teaspoon freshly ground black pepper
  • Optional garnishes: toasted sesame seeds and chopped green onions

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Pat the chicken wings dry with paper towels to ensure crispy skin.
  3. Arrange the wings in a single layer on the wire rack, making sure they aren’t touching.
  4. Bake the wings for 35-40 minutes, flipping halfway through, until golden brown and crispy.
  5. While the wings bake, whisk together the glaze: combine miso paste, maple syrup, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and black pepper until smooth and glossy.
  6. Remove wings from the oven and brush them generously with the sticky miso maple glaze.
  7. Return glazed wings to the oven for another 5-7 minutes to caramelize the glaze.
  8. Remove wings from oven and let cool for 5 minutes to allow the glaze to set.
  9. Garnish with toasted sesame seeds and chopped green onions. Serve warm.

Notes

Dry wings thoroughly before baking for maximum crispiness. Use a wire rack to allow air circulation. Brush glaze at the end to avoid burning. Rest wings after glazing to let the sauce set. If glaze is too thick, add a splash of warm water to loosen. For gluten-free, substitute soy sauce with tamari or coconut aminos. For extra heat, add chili flakes or sriracha to the glaze.
