  • 1 lb (450 g) ground beef, preferably 80/20 blend for juiciness
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce (optional)
  • ½ cup (120 ml) mayonnaise
  • 1 tbsp truffle oil (white or black)
  • 1 small garlic clove, minced
  • 1 tsp fresh lemon juice
  • Salt and pepper to taste
  • 4 brioche burger buns, lightly toasted
  • 2 cups fresh arugula, washed and dried
  • Optional: sliced tomatoes or caramelized onions

Instructions

  1. In a mixing bowl, combine ground beef with kosher salt, black pepper, garlic powder, and Worcestershire sauce. Mix gently until just combined. Divide into 4 equal portions and shape each into a ¾-inch thick patty. Make a slight indentation in the center of each patty with your thumb to prevent puffing during cooking. (About 10 minutes)
  2. In a small bowl, whisk together mayonnaise, truffle oil, minced garlic, and fresh lemon juice. Season with salt and pepper to taste. Chill in the fridge while cooking the patties. (5 minutes)
  3. Heat a cast iron skillet or heavy-bottomed pan over medium-high heat until hot but not smoking. (2-3 minutes)
  4. Place patties in the hot skillet and cook for 3-4 minutes on the first side without moving them to form a crust. Flip and cook another 3-4 minutes for medium doneness. Avoid pressing down on patties. (7-8 minutes total)
  5. While patties cook, slice and toast brioche buns lightly in a toaster or dry pan until golden and slightly crisp. (3-4 minutes)
  6. Spread a generous dollop of creamy truffle aioli on the bottom bun, add the cooked burger patty, top with fresh arugula and optional extras like sliced tomatoes or caramelized onions. Finish with the top bun.
  7. Serve immediately for best texture and flavor.

Notes

Make a slight indentation in the center of each patty to prevent puffing. Use medium-high heat for searing to get a crust without burning. Do not press patties while cooking to keep them juicy. Truffle aioli can be made a day ahead and refrigerated. Toast buns lightly to prevent sogginess. For cheese, add a slice during the last minute of cooking and cover the pan to melt.
