  • 2 cups Flamin’ Hot Cheetos, crushed slightly
  • 4 cups cornbread, crumbled into small pieces
  • 2 tablespoons unsalted butter, melted
  • 1 cup low-sodium chicken broth
  • 1 cup celery, diced
  • 1 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. If using homemade cornbread, crumble it into small pieces. If store-bought, break it up into roughly 1-inch chunks.
  3. Heat a skillet over medium heat and melt 2 tablespoons of butter. Add diced onions, celery, and garlic, cooking until softened (about 5-7 minutes).
  4. In a large mixing bowl, combine the crumbled cornbread, Flamin’ Hot Cheetos, sautéed vegetables, and parsley.
  5. Pour in melted butter and chicken broth, mixing gently. Add beaten eggs and stir until everything is well combined.
  6. Taste and adjust with salt and pepper, keeping in mind the Cheetos bring plenty of flavor.
  7. Spread the stuffing mixture evenly into the greased baking dish.
  8. Bake for 25-30 minutes, or until the top is golden and slightly crispy.
  9. Let the stuffing cool for 5-10 minutes before serving. Garnish with extra parsley if desired.
