  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • Carrots, peeled and sliced into sticks
  • Cucumbers, sliced into rounds or sticks
  • Cherry tomatoes
  • Broccoli florets
  • Cauliflower florets
  • Black olives
  • Cheese cubes (optional)
  • Dips: ranch dressing, hummus, or guacamole

Instructions

  1. Wash and dry all the vegetables thoroughly.
  2. Slice the bell peppers into strips to form the turkey’s feathers. Peel and slice the carrots into sticks. Slice cucumbers into rounds or sticks, and separate broccoli and cauliflower into bite-sized florets.
  3. Layer the bell pepper strips at the top of the platter in a fan shape, alternating colors for a vibrant look. Add rows of carrots, cucumbers, broccoli, and cauliflower beneath the peppers, layering each vegetable in a semi-circle pattern to mimic feathers.
  4. Place a whole bell pepper (preferably orange or red) in the center of the platter to serve as the turkey’s body. Cut a small triangle from a yellow bell pepper to make a beak and attach it with a toothpick.
  5. Use black olives to create the turkey’s eyes, securing them with toothpicks if needed. Arrange cherry tomatoes around the platter for pops of color.
  6. Fill small bowls with dips like ranch dressing, hummus, or guacamole, and place them around the platter for easy access.

Notes

Prep vegetables close to serving time to maintain freshness. Cover the tray with plastic wrap if refrigerating before serving.
