  • 1 cup fresh cranberries, roughly chopped
  • 2 stalks celery, finely diced
  • 1 medium yellow onion, finely chopped
  • 4 tablespoons unsalted butter, melted
  • 1 ½ cups chicken broth (or vegetable broth for vegetarian option)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with butter or cooking spray.
  2. Pop your popcorn using an air popper or stovetop method. Set aside 8 cups of plain popcorn in a large mixing bowl.
  3. In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped celery, onion, and garlic. Cook for 5-7 minutes until tender and fragrant.
  4. Add the sautéed vegetables to the popcorn. Toss in the chopped cranberries, fresh herbs, breadcrumbs (if using), salt, and pepper. Stir gently to combine.
  5. Drizzle the chicken broth and remaining 2 tablespoons of melted butter over the mixture. Toss everything gently until the popcorn is evenly coated and slightly softened.
  6. Pour the stuffing mixture into the greased baking dish. Press down lightly to even out the top.
  7. Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and slightly crisp.
  8. Remove the stuffing from the oven and let it sit for 5 minutes before serving.
