Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs (regular or panko, or gluten-free if needed)
  • 2 eggs, beaten
  • 1/4 cup milk (or dairy-free alternative like almond milk)
  • 1 small apple, grated
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp sage (fresh or dried)
  • 1 tsp thyme (fresh or dried)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp apple cider vinegar
  • 3 tbsp maple syrup (for the glaze)
  • 3 tbsp ketchup (for the glaze)
  • 1 tbsp Worcestershire sauce (for the glaze)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, grated apple, onion, garlic, sage, thyme, salt, and pepper. Mix until just combined.
  3. Transfer the meat mixture into the prepared loaf pan and press lightly to form a smooth top.
  4. In a small bowl, whisk together maple syrup, ketchup, Worcestershire sauce, and apple cider vinegar to make the glaze.
  5. Spread half of the glaze evenly over the meatloaf.
  6. Bake the meatloaf in the oven for 45 minutes. After 30 minutes, spread the remaining glaze on top and return it to the oven.
  7. Check for doneness with an instant-read thermometer; the internal temperature should reach 160°F (71°C).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Let the meatloaf rest for 10 minutes after baking to ensure it stays juicy. Use fresh herbs for the best flavor, and watch the glaze to prevent burning.
