Elegant Champagne Berry Tart Board

A quick and easy tart board featuring flaky tart shells, champagne-infused cream, and fresh berries, perfect for Galentine’s celebrations or any elegant gathering.

Ingredients

  • 2 cups all-purpose flour (250 g)
  • 3/4 cup unsalted butter (170 g), cold and cubed
  • 1/4 cup granulated sugar (50 g)
  • 1/4 teaspoon salt
  • 34 tablespoons ice water
  • 1 cup heavy cream (240 ml), chilled
  • 2 tablespoons powdered sugar
  • 1/4 cup champagne or sparkling wine (60 ml), chilled
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and halved
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • Edible flowers (optional)
  • Fresh mint leaves

Instructions

  1. In a food processor, pulse 2 cups all-purpose flour, 3/4 cup cold cubed unsalted butter, 1/4 cup sugar, and 1/4 teaspoon salt until mixture resembles coarse crumbs.
  2. Add 3 tablespoons ice water, pulsing until dough just comes together; add more water by teaspoon if too dry.
  3. Turn dough onto plastic wrap, shape into a disk, wrap tightly, and refrigerate for at least 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. Lightly flour work surface and rolling pin; roll dough to about 1/8-inch thickness.
  6. Cut rounds slightly larger than tart pans (about 4.5 inches diameter), press into pans, and prick bottoms with a fork.
  7. Place tart pans on baking sheet and bake for 15-18 minutes until golden brown; cool completely on wire rack.
  8. In a chilled mixing bowl, whip 1 cup heavy cream with 2 tablespoons powdered sugar and 1 teaspoon vanilla extract until soft peaks form.
  9. Slowly drizzle in 1/4 cup chilled champagne while continuing to whip until stiff peaks form; avoid overbeating.
  10. Spoon or pipe champagne cream into cooled tart shells.
  11. Arrange strawberries, blueberries, raspberries, and blackberries on top.
  12. Garnish with fresh mint leaves and edible flowers if desired.
  13. Chill assembled tarts for 15 minutes before serving.

Notes

Keep butter and water ice-cold for flaky dough. Chill mixing bowl and beaters before whipping cream. Drizzle champagne slowly to avoid deflating cream. Bake tart shells ahead and store airtight. Assemble just before serving to prevent sogginess. Use parchment and pie weights to prevent puffing.
