  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk (whole or 2%)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil or cooking spray (for greasing muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with olive oil or cooking spray.
  2. Chop about 2 cups of fresh spinach roughly. If using frozen spinach, thaw and squeeze dry to remove excess moisture.
  3. Crack 8 large eggs into a mixing bowl. Add 1/4 cup milk, 1/2 teaspoon garlic powder, 1/4 teaspoon nutmeg, salt, and freshly ground black pepper to taste. Whisk vigorously until the mixture is uniform and frothy.
  4. Fold in the chopped spinach and 1/2 cup crumbled feta cheese gently, avoiding over-mixing.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes, checking at 18 minutes. Muffins are done when tops are set, lightly golden, and a toothpick inserted comes out clean.
  7. Let the muffins cool in the pan for about 5 minutes before loosening edges with a butter knife and removing onto a wire rack to cool completely.

Notes

Use room temperature eggs for fluffier muffins. Drain spinach well to avoid sogginess. Do not overfill muffin cups to prevent overflow. Avoid opening the oven door frequently to prevent muffins from deflating. Fresh spices enhance flavor. If muffins appear wet but toothpick is clean, bake for an additional 2 minutes.
