Adorable bunny-shaped pancakes with fresh fruit, whipped cream, and sprinkles make for a festive and joyful Easter breakfast.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Fresh strawberries, sliced
  • Whipped cream
  • Chocolate chips or raisins
  • Sprinkles or shredded coconut
  • Maple syrup or honey (optional)

Instructions

  1. In a medium mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.
  2. Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with butter or oil.
  3. Pour the batter onto the skillet to form one large circle for the bunny’s face and two smaller circles for the ears. Cook until bubbles form on the surface, about 2 minutes, then carefully flip and cook the other side for 1-2 minutes until golden brown.
  4. Arrange the pancakes on a plate, positioning the smaller circles as the bunny’s ears. Use sliced strawberries for the ears, chocolate chips or raisins for the eyes, and a dollop of whipped cream for the tail. Add sprinkles or shredded coconut for extra flair.
  5. Drizzle with maple syrup or honey if desired, and enjoy while warm!

Notes

[‘Don’t overmix the batter to avoid dense pancakes.’, ‘Keep the skillet at medium heat to prevent burning.’, ‘Slice strawberries and prepare toppings ahead of time for a smoother cooking process.’, ‘Experiment with mini bunny pancakes for bite-sized fun.’]
