  • 2 tsp baking powder
  • 1/2 cup (100g) granulated sugar

  • 3/4 cup (180ml) whole milk
  • 1/4 cup (60g) unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • A few drops pink food coloring (optional)
  • 4 oz (115g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1/4 cup (60ml) heavy cream, whipped to soft peaks
  • 1 cup (150g) fresh or frozen mixed berries (strawberries, raspberries, blueberries), pureed
  • 1 tsp lemon zest
  • 1 cup (120g) powdered sugar (for glaze)
  • 23 tbsp berry juice or puree (for glaze)
  • 12 tbsp milk or water (to thin glaze if needed)
  • Optional: a tiny pinch of salt (to balance sweetness in glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease donut pan with butter or non-stick spray.
  2. In a medium bowl, whisk together flour, baking powder, granulated sugar, and salt.
  3. In another bowl, beat eggs, milk, melted butter, vanilla extract, and pink food coloring (if using).
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; batter should be smooth but slightly thick.
  5. Spoon batter evenly into donut pan cavities, filling about 3/4 full.
  6. Bake for 15-18 minutes or until a toothpick inserted comes out clean and tops are lightly golden.
  7. Cool donut cups in pan for 5 minutes, then transfer to wire rack to cool completely.
  8. Beat cream cheese with powdered sugar until smooth. Fold in whipped cream, pureed berries, and lemon zest until light and fluffy.
  9. Fill cooled donut cups with berry crème using a piping bag or spoon.
  10. Mix powdered sugar with berry juice or puree; add milk or water as needed to achieve a smooth, pourable glaze.
  11. Drizzle glaze over filled donut cups.
  12. Chill in refrigerator for 15-20 minutes to set glaze and filling before serving.

Notes

Do not overmix the batter to keep donuts light and airy. Use room temperature eggs and milk for best results. Whip cream to soft peaks for smooth filling. Puree berries thoroughly to avoid lumps. Cool donuts completely before filling to prevent sogginess. If glaze is too thick, thin with additional berry juice or milk.
