Delicious Peeps Smores Bars Recipe Easy Gooey Marshmallow Treats

These Peeps s’mores bars are a colorful, festive twist on classic s’mores with a gooey marshmallow center and a crunchy graham cracker crust. Perfect for celebrations and quick to make, they bring nostalgic campfire flavors right into your kitchen.

  • 1 ½ cups (150g) graham cracker crumbs
  • ½ cup (115g) unsalted butter, melted
  • ¼ cup (50g) granulated sugar
  • A pinch of salt
  • 1 standard bag Peeps marshmallow candies (approx. 1012 chicks or bunnies)
  • 1 cup (175g) milk chocolate chips
  • ½ cup (50g) mini marshmallows
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8 inch baking pan with parchment paper or lightly grease it.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and a pinch of salt. Pour in melted unsalted butter and mix until the crumbs are evenly coated and hold together when pressed.
  3. Press the crust firmly into the bottom of your prepared pan, creating an even layer. Bake for 8-10 minutes until lightly golden.
  4. While the crust bakes, melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth. Alternatively, melt over a double boiler. Set aside to cool slightly.
  5. Once the crust is out of the oven, immediately sprinkle the melted chocolate evenly over the warm crust and spread gently with a spatula.
  6. Place the Peeps marshmallow candies evenly over the chocolate layer.
  7. Sprinkle mini marshmallows on top of the Peeps.
  8. Return the pan to the oven for 5-7 minutes until the Peeps and marshmallows puff up and start melting but do not burn. Watch closely.
  9. Remove from oven and let cool for at least 15 minutes to firm up while staying gooey inside.
  10. Slice into squares using a sharp knife warmed under hot water and dried before slicing for cleaner cuts.

Notes

Pre-bake the crust to keep it crisp and prevent sogginess. Watch the marshmallows closely during the final bake to avoid burning. Use a warm knife for cleaner slicing. Bars can be refrigerated for 10 minutes if too sticky to cut immediately. Tent with foil if Peeps brown too quickly.
