  • 1 tbsp lemon juice
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar (optional)
  • 1 tsp fresh lemon zest
  • 1 cup (90g) graham crackers, broken into bite-sized pieces
  • Fresh mint leaves for garnish (optional)
  • Additional fruits like blueberries or raspberries (optional)
  • Mini chocolate chips or white chocolate shavings (optional)

Instructions

  1. Rinse and hull the strawberries. Slice them thinly and toss with granulated sugar and lemon zest. Let macerate for 15 minutes.
  2. Beat the softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2-3 minutes.
  3. In a separate cold bowl, whip the heavy cream until soft peaks form, about 3-4 minutes.
  4. Add powdered sugar, vanilla extract, and lemon juice to the cream cheese mixture and beat until incorporated.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate it.
  6. Spoon the cheesecake filling into a serving bowl and smooth the top.
  7. Spoon the macerated strawberries generously over the cheesecake layer.
  8. Arrange graham crackers, extra strawberries, and optional garnishes like mint or chocolate shavings around the bowl on a serving platter.
  9. Chill the assembled board in the fridge for at least 30 minutes before serving to let flavors meld and filling firm up slightly.
