  • ¼ cup (30g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (about 150g) fresh strawberries, finely chopped
  • Optional garnish: chopped nuts or white chocolate shavings

Instructions

  1. Melt the chocolate: In a microwave-safe bowl, heat the semi-sweet chocolate chips in 30-second bursts, stirring in between, until smooth (about 1-2 minutes total). Set aside to cool slightly.
  2. Beat the cream cheese: In a mixing bowl, use an electric mixer to beat the softened cream cheese until creamy and smooth, about 2-3 minutes.
  3. Add powdered sugar and vanilla: Gradually add powdered sugar and vanilla extract to the cream cheese and continue beating until fully combined and fluffy.
  4. Heat the cream: Warm the heavy cream in a small saucepan over low heat until just simmering (do not boil). Slowly pour the warm cream into the melted chocolate, stirring continuously until it forms a glossy ganache.
  5. Combine chocolate ganache and cream cheese mixture: Pour the ganache into the cream cheese bowl in a steady stream while mixing on low speed. Mix until smooth and fully incorporated, about 2 minutes.
  6. Fold in strawberries: Gently fold the finely chopped fresh strawberries into the truffle mixture with a spatula, taking care not to crush them.
  7. Assemble the jars: Spoon the truffle mixture into clean jars or dessert cups, smoothing the tops. Optionally, add chopped nuts or white chocolate shavings on top for garnish.
  8. Chill: Refrigerate the jars for at least 2 hours (ideally 4) to let the truffle firm up and flavors meld.
  9. Serve: Serve chilled with a small spoon.
