A unique and indulgent recipe combining savory turkey with rich, velvety chocolate gravy for an unforgettable holiday meal.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 cups chicken or turkey stock
  • 1 cup milk
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, melt 3 tablespoons of unsalted butter over medium heat. Once melted, whisk in 3 tablespoons of all-purpose flour and cook for 1-2 minutes until golden and fragrant.
  2. Whisk in 2 tablespoons of unsweetened cocoa powder, ensuring no lumps remain.
  3. Gradually add 2 cups of chicken or turkey stock, whisking constantly to prevent lumps. Follow with 1 cup of milk, continuing to whisk until smooth.
  4. Stir in 2 tablespoons of brown sugar, 1 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
  5. Bring the mixture to a gentle simmer, stirring occasionally. Cook for 5-7 minutes until the gravy thickens to your desired consistency.
  6. Taste the gravy and adjust seasoning as needed. Add a pinch more cocoa powder for a stronger chocolate flavor or a touch more brown sugar for sweetness.
  7. Pour the hot chocolate gravy over turkey slices, and garnish with a sprinkle of smoked paprika for presentation.

Notes

[‘Use warm stock for smoother gravy.’, ‘Taste and adjust seasoning as you go.’, ‘Add a splash of brewed coffee for deeper chocolate flavor.’, ‘Thin the gravy with stock or milk if it becomes too thick.’]
