  • 4 large eggs, room temperature
  • 2 cups whole milk (or 2% or almond milk for lighter option)
  • 1/2 cup heavy cream (can swap with extra milk)
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 3 ripe bananas, sliced lengthwise and halved
  • Butter for greasing the baking dish
  • 1/2 cup unsalted butter (1 stick) for rum sauce
  • 1 cup packed light brown sugar for rum sauce
  • 1/4 cup dark rum (adjust to taste; can substitute with rum extract)
  • 1 teaspoon vanilla extract for rum sauce
  • 1/4 teaspoon ground cinnamon for rum sauce
  • Pinch of salt for rum sauce

Instructions

  1. Butter your 9×13-inch baking dish generously. Cut the bread into 1-inch cubes and spread half of them evenly in the dish. Arrange half of the banana slices on top in a single layer, then add the remaining bread cubes and bananas, layering evenly.
  2. In a large bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and a pinch of salt until smooth and well combined.
  3. Slowly pour the custard evenly over the bread and bananas, pressing down gently to help the bread absorb the liquid. Cover the dish with plastic wrap and refrigerate for at least 2 hours, ideally overnight.
  4. Preheat your oven to 350°F (175°C). Remove the casserole from the fridge and let it sit at room temperature for 20 minutes.
  5. Place the dish uncovered in the preheated oven. Bake for 45-55 minutes, or until the top is golden brown and a knife inserted in the center comes out clean. Tent with foil if the top browns too quickly.
  6. While the casserole bakes, melt butter in a medium saucepan over medium heat. Stir in the brown sugar, cinnamon, and salt. Cook, stirring frequently, until the sugar dissolves and the mixture bubbles (about 3-5 minutes). Remove from heat and carefully stir in the dark rum and vanilla extract.
  7. Once the casserole is out of the oven, let it rest for 5 minutes. Drizzle generously with the warm rum sauce before serving. Optionally, add a dusting of powdered sugar or a scoop of vanilla ice cream.

Notes

For best texture, soak the bread overnight in the custard mixture. Use brioche or challah bread for richness. Tent casserole with foil if browning too fast. For no alcohol, omit rum and add extra vanilla. Rum sauce can be made ahead and reheated gently. For dairy-free, substitute milk and cream with coconut milk and use vegan butter.
