Instructions

  1. Cut boneless, skinless chicken into 1 to 1.5 inch bite-sized pieces and pat dry with paper towels.
  2. In a large bowl, combine flour, garlic powder, onion powder, smoked paprika, ranch seasoning, salt, and black pepper; whisk to combine.
  3. Beat eggs in a separate bowl until smooth.
  4. Dip each chicken piece into beaten eggs, then dredge in flour mixture, pressing lightly to adhere. For extra crunch, double dip by repeating egg and flour steps.
  5. Pour oil into a skillet to a depth of about 1.5 inches and heat to 350°F (175°C).
  6. Fry chicken pieces in batches, avoiding overcrowding, for 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Flip halfway through.
