These crispy pizza bites combine a crunchy baked crust with creamy Alfredo sauce, tender chicken, and melty mozzarella, making them perfect for game day snacks or parties.

  • 1 package refrigerated pizza dough (about 13.8 oz / 390 g)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter (28 g)
  • Salt and black pepper, to taste
  • 1 cup cooked chicken, shredded or chopped (approx. 150 g)
  • 1 1/2 cups shredded mozzarella cheese (150 g)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Fresh parsley, chopped, for garnish (optional)
  • Olive oil or cooking spray, for greasing the baking sheet
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line your baking sheet with parchment paper or a silicone mat.
  2. Prepare the Alfredo sauce: In a medium saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in the heavy cream and bring to a gentle simmer, stirring frequently.
  4. Stir in the Parmesan cheese gradually, whisking until the sauce thickens slightly, about 3-5 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
  5. Roll out the pizza dough on a lightly floured surface to about 1/4 inch (0.6 cm) thickness. Use a round cookie cutter or glass (about 2.5 inches / 6.5 cm diameter) to cut out circles. You should get roughly 20-24 circles.
  6. Place dough circles on the baking sheet. Brush the edges lightly with olive oil for extra golden crispness.
  7. Spread a teaspoon or so of Alfredo sauce over each dough circle, leaving a small border around the edges.
  8. Top each with shredded chicken, mozzarella cheese, a sprinkle of Italian seasoning, and garlic powder. Add a pinch of red pepper flakes if desired.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and cheese is bubbly and slightly browned.
  10. Remove from oven, garnish with fresh parsley if using, and let cool for a couple of minutes before serving.

Notes

If pizza bites aren’t crisping enough on the bottom, transfer the baking sheet to a lower rack for the last 3 minutes of baking. Avoid overloading bites with sauce or cheese to prevent sogginess. Use room temperature dough for easier rolling. Reheat leftovers in the oven at 350°F for 8-10 minutes to maintain crispiness; avoid microwaving.
