Ingredients

  • Salmon fillets (skin-on, about 6 oz / 170 g each)
  • Everything bagel seasoning (store-bought or homemade blend of sesame seeds, poppy seeds, dried onion, garlic flakes, and salt)
  • Olive oil (2 tablespoons)
  • Salt (to taste, recommended kosher salt)
  • Freshly ground black pepper (to taste)
  • Lemon wedges (for serving)
  • Optional: Smoked paprika (a pinch)
  • Optional: Fresh herbs like dill or parsley (finely chopped, for garnish)

Instructions

  1. Pat the salmon dry using paper towels, thoroughly drying the skin and flesh (about 2 minutes).
  2. Season the salmon by sprinkling salt and pepper evenly on both sides. Generously coat the skin side with everything bagel seasoning (about 1 tablespoon per fillet) and press the seasoning gently into the skin.
  3. Heat a non-stick skillet or cast-iron pan over medium-high heat and add 2 tablespoons of olive oil. Let the oil heat until it shimmers but isn’t smoking (around 2-3 minutes).
  4. Carefully lay the fillets skin-side down in the pan. Press down lightly with a spatula or tongs for 10 seconds to prevent curling. Cook for 5-6 minutes without moving to allow the skin to crisp up.
  5. Gently flip the fillets and cook for another 2-3 minutes, depending on thickness, until the salmon is just cooked through and flakes easily with a fork. Remove from heat and let rest for a minute.
  6. Serve immediately with fresh lemon wedges to squeeze over.

Patting the salmon dry is crucial for crispy skin. Use a hot pan but avoid smoking oil. Press the fillet down in the first 10 seconds to prevent curling. Cook in batches if needed to avoid overcrowding. For thicker fillets, lower heat after flipping to avoid over-browning. Leftovers can be reheated in a hot skillet skin-side down to maintain crispiness.
