Crispy Loaded Potato Skins Recipe with Cheddar & Bacon

Crispy potato skins loaded with gooey melted cheddar cheese, smoky bacon crumbles, and a dollop of tangy sour cream. Perfect for game nights, family gatherings, or casual movie nights.

  • 4 medium-sized russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup freshly shredded cheddar cheese
  • 4 slices cooked and crumbled bacon
  • 1/2 cup sour cream
  • 2 green onions, thinly sliced

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Scrub the potatoes thoroughly, then pat them dry. Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin.
  3. Place the potato halves in a mixing bowl. Drizzle with olive oil and toss to coat. Sprinkle generously with salt and pepper.
  4. Arrange the potato halves skin-side down on the baking sheet. Bake for 20-25 minutes or until crispy and golden.
  5. Remove the skins from the oven and sprinkle each with shredded cheddar cheese and crumbled bacon. Return to the oven for another 5 minutes or until the cheese is melted and bubbly.
  6. Remove the potato skins from the oven and let them cool slightly. Add a dollop of sour cream to each and sprinkle with green onions.
  7. Serve immediately while warm.
