  • 2/3 cup (85g) all-purpose flour, sifted
  • 2/3 cup (160ml) whole milk or dairy-free alternative
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 cup (100g) Gruyere cheese, shredded
  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter (for caramelizing onions)
  • 1 teaspoon sugar (for caramelizing onions)
  • Fresh thyme leaves (optional, for garnish)
  • Flaky sea salt (to taste)

Instructions

  1. Preheat oven to 425°F (220°C) and place a 10-inch cast-iron skillet inside to heat for about 10 minutes.
  2. Caramelize onions by melting 2 tablespoons butter in a skillet over medium heat. Add sliced onions and 1 teaspoon sugar. Stir frequently and cook for 15-20 minutes until golden and soft. Set aside.
  3. In a mixing bowl, whisk together eggs, sifted flour, milk, salt, black pepper, and garlic powder until smooth and slightly frothy.
  4. Carefully remove the hot skillet from the oven. Add 1 tablespoon butter and swirl until melted and bubbly.
  5. Pour the batter into the skillet, allowing the butter to sizzle and coat the edges.
  6. Sprinkle shredded Gruyere cheese evenly over the batter, then spoon caramelized onions on top.
  7. Bake for 20-25 minutes until puffed, golden brown, and crispy on the edges. Avoid opening the oven door during the first 15 minutes.
  8. Remove from oven and immediately sprinkle with flaky sea salt and fresh thyme leaves if using. Serve warm.
