  • 1 cup whole milk (or plant-based milk)
  • 1 cup chicken or vegetable broth
  • 1 cup shredded cheddar cheese (or dairy-free cheese)
  • 1 cup crispy fried onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. Bring a large pot of water to a boil. Add a generous pinch of salt and blanch the trimmed green beans for 3-4 minutes. Drain and set aside.
  3. In a large sauté pan, melt 2 tablespoons of unsalted butter over medium heat. Add the sliced onions and cook until softened, stirring occasionally, about 5 minutes.
  4. Sprinkle the flour over the onions and stir well to coat. Cook for 1-2 minutes to remove the raw taste of the flour.
  5. Gradually pour in the milk and chicken broth, whisking constantly to prevent lumps. Bring to a simmer and cook until the sauce thickens, about 5-7 minutes.
  6. Reduce the heat to low and stir in the shredded cheddar cheese, garlic powder, salt, and pepper. Mix until the cheese is fully melted and the sauce is smooth.
  7. Remove the pan from heat and gently fold in the blanched green beans until evenly coated in the creamy sauce.
  8. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  9. Top with crispy fried onions, ensuring an even layer for maximum crunch.
  10. Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbling and the onions are golden brown. Let cool slightly before serving.

Notes

Blanch the green beans briefly to keep them tender yet crisp. Add crispy onions just before baking to maintain their crunch. If the sauce is too thick, whisk in a little more milk or broth.
