  • 1 teaspoon vanilla extract
  • Gel food coloring (red, blue, green, yellow, purple)

Instructions

  1. Preheat your oven to 200°F (95°C). Line two baking sheets with parchment paper or silicone mats.
  2. Separate 4 large eggs, ensuring no yolk gets in. Let the whites come to room temperature for about 20 minutes.
  3. In a clean, dry bowl, beat the egg whites on medium speed until foamy. Add 1/4 teaspoon cream of tartar and continue whipping until soft peaks form.
  4. With the mixer running, add 1 cup (200 grams) granulated sugar one tablespoon at a time, whipping well after each addition until stiff, glossy peaks form and sugar dissolves.
  5. Gently fold in 1 teaspoon vanilla extract.
  6. Divide the meringue into 5 small bowls. Add a few drops of gel food coloring to each and gently fold until evenly tinted.
  7. On a large sheet of parchment, spread strips of each colored meringue side by side. Use a spatula or piping bag fitted with a round tip to scoop up the strip and transfer into a clean piping bag to create rainbow swirls.
  8. Pipe 1-inch rounds or stars onto prepared baking sheets, spacing about 1 inch apart.
  9. Bake for 1.5 to 2 hours until dry to the touch and easily lift off parchment. Turn off oven and leave meringues inside to cool completely for about 1 hour.
  10. Store cooled meringues in an airtight container at room temperature.

Use room temperature egg whites for best volume. Avoid any fat contamination in bowls or beaters. Add sugar gradually to prevent gritty texture. Bake low and slow to avoid browning. Cool meringues slowly in the oven to maintain airy centers. If meringues soften over time, re-crisp in a 200°F oven for 5-10 minutes.
