These crispy cauliflower buffalo bites are a spicy, crunchy snack made with a light batter and homemade buffalo sauce, perfect for game nights or quick cravings.

  • 1 medium head cauliflower, cut into bite-sized florets
  • 3/4 cup (90g) all-purpose flour
  • 3/4 cup (180ml) cold water
  • 1 cup (100g) panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup (120ml) hot sauce (Frank’s RedHot recommended)
  • 3 tablespoons (45g) unsalted butter, melted
  • 1 teaspoon honey or maple syrup (optional)
  • Optional garnishes: chopped fresh parsley or celery sticks

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and set a cooling rack on top if available.
  2. In a large bowl, whisk together the flour, garlic powder, smoked paprika, salt, and pepper. Slowly add cold water, whisking until smooth and thick enough to coat cauliflower but still pourable.
  3. Dip each cauliflower floret into the batter, letting excess drip off, then roll in panko breadcrumbs until well-coated. Place coated florets on the prepared baking sheet or cooling rack.
  4. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. If soggy, bake a few extra minutes or broil on low for 1-2 minutes, watching closely.
  5. While baking, melt butter in a small saucepan over low heat. Stir in hot sauce and honey or maple syrup until combined and warm. Remove from heat.
  6. Toss baked cauliflower bites quickly in the buffalo sauce until evenly coated. Optionally, return to baking sheet for 5 minutes to set the sauce.
  7. Serve immediately with celery sticks and your favorite dipping sauce such as ranch or blue cheese. Keep on a cooling rack if not serving right away to maintain crispiness.

Notes

Do not overcrowd the baking sheet to ensure crispiness. Toss bites in sauce immediately after baking to help sauce stick without sogginess. Use panko breadcrumbs for best crunch. For gluten-free, substitute flour and panko with gluten-free versions. Butter can be replaced with coconut oil for dairy-free option. Air frying at 400°F for 15 minutes is a great alternative.
