  • 8 oz brie cheese, rind removed and cut into small cubes
  • ½ cup jam or fruit preserves (raspberry, fig, apricot, or seasonal)
  • 1 cup walnuts, roughly chopped
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the candied walnuts: In a small bowl, mix chopped walnuts with melted butter, granulated sugar, and lemon zest if using. Spread on the lined baking sheet and bake for about 8 minutes, stirring halfway through until golden and fragrant. Let cool completely.
  3. On a lightly floured surface, unfold the thawed puff pastry sheet and cut into 1.5-inch squares.
  4. Place a cube of brie in the center of each puff pastry square. Top with about ½ teaspoon of jam, then sprinkle a small pinch of the cooled candied walnuts on top.
  5. Brush the edges of each square lightly with the beaten egg using a pastry brush.
  6. Arrange the squares on the prepared baking sheet with space between each. Bake for 15 to 18 minutes until puffed and golden.
  7. Let the bites cool on the baking sheet for about 5 minutes before serving.

Notes

Keep puff pastry cold until ready to use to maintain flakiness. Watch candied walnuts closely while baking to avoid burning. Do not overfill the pastry squares to prevent sogginess.
