  • 1/2 cup cornmeal (70g), fine-ground
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup milk (180ml), whole milk preferred
  • 1 large egg, room temperature
  • Vegetable oil for frying (canola or peanut oil recommended)
  • Honey mustard sauce for serving

Instructions

  1. Cut each bacon strip in half. Wrap each mini hot dog with a half strip of bacon, securing with a toothpick or skewer. Set aside.
  2. Thinly slice jalapenos, removing seeds if you want milder heat. Pat dry with paper towels to avoid batter clumping.
  3. In a large bowl, whisk together flour, cornmeal, baking powder, sugar, and salt until combined.
  4. In a separate bowl, beat the egg with milk. Pour into dry ingredients and stir until just combined. Batter should be thick but smooth; add a splash more milk if too thick.
  5. Gently fold sliced jalapenos into the batter.
  6. Fill a deep frying pan or Dutch oven with 2-3 inches of vegetable oil. Heat to 350-375°F (175-190°C) using a thermometer.
  7. Dip each bacon-wrapped sausage into the batter, letting excess drip off. Carefully lower into hot oil. Fry a few at a time to avoid crowding, about 3-4 minutes until golden brown and crispy, turning occasionally.
  8. Remove with a slotted spoon and place on paper towels or wire rack to drain excess oil. Let cool slightly before serving.
  9. Serve warm with honey mustard sauce for dipping or drizzling.

Keep oil temperature steady between 350-375°F to avoid soggy or burnt bites. Fry in batches to prevent overcrowding. For dairy-free, substitute almond milk. Turkey bacon can be used for a leaner option. Remove jalapeno seeds for less heat. Avoid microwaving leftovers to maintain crispiness; reheat in oven at 375°F for 8-10 minutes.
