  • 1 teaspoon rice vinegar
  • 2 cloves garlic, minced

  • Pinch of black pepper
  • 1 tablespoon olive oil (or avocado oil)
  • Optional: thinly sliced green onions for garnish
  • Optional: toasted sesame seeds for garnish

Instructions

  1. Rinse the salmon fillets and pat dry with paper towels. Cut into uniform 1-inch cubes.
  2. In a medium bowl, whisk together honey, soy sauce, rice vinegar, and minced garlic to make the marinade.
  3. Add the salmon cubes to the marinade and gently toss to coat. Let sit for 10 minutes.
  4. In a separate bowl, mix cornstarch or arrowroot powder with a pinch of black pepper.
  5. Remove each salmon cube from the marinade (reserve leftover marinade) and toss in the cornstarch mixture until lightly coated. Shake off excess.
  6. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  7. Arrange the coated salmon cubes in a single layer in the air fryer basket, avoiding overcrowding.
  8. Cook for 8-10 minutes, shaking the basket halfway through, until golden and cooked through.
  9. While salmon cooks, pour reserved marinade into a small saucepan and simmer over medium heat for 3-4 minutes until slightly thickened.
  10. Transfer cooked salmon bites to a bowl and drizzle with the warm honey garlic glaze. Toss gently to coat.
  11. Garnish with sliced green onions and toasted sesame seeds if desired. Serve immediately.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Pat salmon dry before marinating to help the coating stick. Use fresh minced garlic for best flavor. Simmer glaze until slightly thickened but not syrupy. Rotate or flip bites if your air fryer cooks unevenly. For gluten-free, use tamari instead of soy sauce and arrowroot powder instead of cornstarch. If no air fryer, bake at 425°F for 12-15 minutes, flipping halfway.
