Ingredients

Scale
  • 1 pound (450g) medium shrimp, peeled and deveined (tail-on for extra crunch)
  • ½ cup (60g) all-purpose flour
  • ½ cup (60g) cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 large eggs, beaten (room temperature)
  • Cooking spray or a light brush of oil
  • ½ cup (120g) mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 teaspoon rice vinegar (optional)
  • 1 teaspoon garlic powder
  • Chopped green onions or chives (for garnish)
  • Sesame seeds (optional, for garnish)
  • Lime wedges, to serve

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels. (5 minutes)
  2. In a shallow bowl, combine all-purpose flour, cornstarch, garlic powder, smoked paprika, salt, and pepper. Stir well. (3 minutes)
  3. In a separate bowl, whisk the eggs until smooth and uniform. Set aside. (2 minutes)
  4. Dip each shrimp first into the egg mixture, letting excess drip off, then dredge thoroughly in the flour mixture. Press gently to ensure the coating sticks. Place coated shrimp on a plate. (10 minutes)
  5. Preheat air fryer to 400°F (200°C) for about 3 minutes.
  6. Spray the air fryer basket lightly with cooking spray or brush with oil. Place shrimp in a single layer without overlapping. Cook in batches if necessary. (2 minutes)
  7. Air fry shrimp at 400°F (200°C) for 6-8 minutes, flipping halfway through, until golden and crispy. (8 minutes)
  8. While shrimp cooks, combine mayonnaise, sriracha, honey, lime juice, rice vinegar, and garlic powder in a small bowl. Whisk until smooth and creamy. Adjust heat or sweetness as desired. (5 minutes)
  9. Transfer cooked shrimp to a bowl and gently toss with the creamy spicy sauce until evenly coated. Avoid overmixing. (2 minutes)
  10. Garnish with chopped green onions and sesame seeds. Serve immediately with lime wedges. (1-2 minutes)

Notes

Use almond flour or gluten-free flour blend for gluten-free. Swap mayo with dairy-free coconut yogurt or vegan mayo for vegan version. If no air fryer, shallow fry or bake on wire rack as alternatives. Pat shrimp dry thoroughly for best crispiness. Avoid overcrowding air fryer basket. Toss shrimp gently with sauce to keep coating intact. Reheat leftovers in air fryer to restore crispiness.
