  • 1 ½ cups (150g) crushed graham crackers or digestive biscuits
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (240ml) heavy whipping cream, cold
  • ½ cup (60g) powdered sugar, sifted
  • 2 teaspoons natural peppermint extract or ½ cup fresh mint leaves, finely chopped
  • Green food coloring (optional)
  • Fresh mint sprigs (optional, for garnish)
  • White chocolate shavings or curls (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine crushed graham crackers, melted butter, and sugar. Mix until crumbs are evenly coated and look like wet sand.
  2. Press the crust mixture firmly into the bottom of an 8-inch square baking pan, making an even layer about ¼ inch thick.
  3. Bake crust for 8-10 minutes or until golden and fragrant. Let cool completely.
  4. In a large bowl, beat softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
  5. Gradually add powdered sugar and continue beating until fully incorporated and silky.
  6. Stir in peppermint extract or finely chopped fresh mint. Add green food coloring if desired and mix until color is even.
  7. In a separate chilled bowl, whip heavy cream until soft peaks form, about 3-5 minutes on medium-high speed.
  8. Gently fold whipped cream into cream cheese mixture using a spatula with slow, sweeping motions to keep mousse light and airy.
  9. Pour mousse over cooled crust and spread evenly with a spatula or back of a spoon.
  10. Cover pan with plastic wrap and chill in refrigerator for at least 4 hours or overnight for best results.
  11. Once chilled and set, cut mousse into slices or squares.
  12. Garnish with fresh mint sprigs or white chocolate shavings if desired. Serve chilled.

Notes

Use softened cream cheese to avoid lumps. Chill bowls and beaters before whipping cream for better volume. Fold whipped cream gently to keep mousse airy. Press crust firmly and bake before adding mousse to prevent sogginess. If mousse is too soft after chilling, freeze for 15 minutes before serving.
