  • 1 cup whole milk
  • 1/2 cup canned pumpkin puree

  • 12 ounces elbow macaroni
  • 1 cup panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried parsley

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Add the milk and pumpkin puree, whisking until smooth. Stir in the nutmeg, paprika, salt, and pepper.
  3. Add the shredded cheddar cheese a handful at a time, whisking until melted and creamy. Reduce heat to low and keep warm.
  4. In a mixing bowl, combine the panko breadcrumbs, melted butter, Parmesan cheese, and parsley. Toss until evenly coated.
  5. Combine the cooked pasta with the pumpkin cheese sauce, stirring until every piece is coated in creamy goodness.
  6. Transfer the mac and cheese to a baking dish if desired. Sprinkle the breadcrumb mixture evenly over the top.
  7. Place under the broiler for 1-2 minutes, or until the topping is golden brown and crispy. Keep a close eye to avoid burning!
